Vegan Banana Chocolate Chip Muffins ~ Yummmmy!!!
1 tsp. baking soda
1/2 tsp salt
3/4 cup maple syrup
3 ea. bananas, very ripe
2 tsp. flax meal
1/2 cup water
1/4 cup oil, not olive
1/4 applesauce
1 cup+ chocolate chips (opt)
1/2 cup wheat germ (opt)
1 tsp cinnamon
1/2 tsp clove
1/4 tsp nutmeg
Heat oven to 350 degrees.
Combine all dry ingredients and spices.
In a separate bowl, combine syrup with mashed banana.
In a separate cup, combine flax with water, whisk well.
Combine flax mixture with syrup mixture.
Add oil, applesauce, wheat germ to syrup mixture. Combine well.
Combine wet and dry mixtures, add chocolate chips. Combine until just incorporated.
Bake for about 40-50 minutes if bread, 25-30 minutes if muffins.
Creamy Butternut Squash Soup
Butternut squash is finally coming back into season and there is no better way to celebrate then with this smooth, creamy, easy to make soup!
3 lb. butternut squash, peeled and cubed
1 ea. leek, washed and sliced
ΒΌ ea. sweet onion, medium diced
3-4 cloves garlic, chopped
4-6 cups vegetable stock, to cover
to taste celtic sea salt and black pepper
1 tbsp chives, chopped for garnish
Place all ingredients in pot except for garnish and boil until squash is soft and stock begins to reduce, about 20-25 minutes. Strain squash leeks, onion, and garlic and place in blender with a strong, fitted lid. Add enough stock to cover and puree until smooth, adding more stock if necessary to achieve desired consistency. Be careful! Soup will be hot! Serve in colorful bowls and garnish with chive and cracked black pepper. Enjoy!
